Super EASY and Delicious Banana Bread

Everyone seems to be baking during quarantine! So many people are cooking and baking with all of their new free time. I’m guilty of this too and have been baking so often that my family can’t eat everything fast enough!

Although I love baking cookies, banana bread is by far the easiest thing to bake (in my opinion).  I found this super easy and incredibly delicious banana bread recipe on YouTube. It’s a fairly basic recipe, but it is seriously fool-proof and so good!

 

Ingredients

Makes one 9-x-5-inch (2L) loaf

1 ½ -¾ cups (375-400 g) mashed ripe bananas (3-4 bananas)

6 Tbsp (90 g) unsalted butter, melted

½ cup (100 g) granulated sugar, plus extra for sprinkling

½ cup (100 g) packed light brown sugar

1 large egg, at room temperature

1 tsp (5 mL) vanilla extract

1 ½ cups (225 g) all-purpose flour

1 tsp (5 g) baking soda

¼ tsp (.75 g) salt

1 cup (250 mL) chocolate chips or toasted walnut pieces (optional)

 

Note: I usually omit the white sugar because I like my banana bread on the less sweet side, but it is completely up to you! I find that it is sweet enough with just the brown sugar!

I also like adding 1 cup of chopped nuts (instead of the toasted walnut pieces). All we had at home was a jar of salted nuts so I chopped them up and omitted the salt from the recipe and it tasted amazing!

 

Directions

  1. Preheat the oven to 350 F* and grease a 9-x-5-inch (2L) loaf pan.
  2. Whisk the banana, melted butter, granulated and brown sugar together until well-blended. Whisk in the egg and vanilla.
  3. In a separate bowl, sift the flour, baking soda and salt. Add this to the banana mixture and stir just until blended. Stir in the chocolate chips or walnut pieces (if using).
  4. Scrape the batter into the prepared loaf tin and sprinkle the top with a little sugar.
  5. Bake for about 75 minutes**, until a tester inserted in the centre of the cake, comes out clean.
  6. Cool the cake for 20 minutes in the tin, then turn it out to cool completely on a cooling rack. The banana bread will keep, well-wrapped for up to 3 days.

*The directions in the description of the original recipe says 325 F but in the video, Anna Olson says 350 F.

**With the oven at 350 F, I usually bake for about 65-70 minutes, so check on your banana bread in the last ~10 minutes

 

Here is the loaf I made this past weekend! I used 3 bananas, but I would recommend using 4 instead!
