The Best Strawberry Sorbet

Spring is finally here!! Those of us in Calgary have felt the recent change in temperature. The snow has melted and the days have never felt sunnier.

But with this comes a challenge…. How should you stay cool? I mean, you could have ice cream but why not find a healthier alternative that not only tastes good but makes you feel good as well?

Lets make…

Strawberry Sorbet!

This may or may not be one of my favorite recipes, and you might just find at least 5 tubs of this in my freezer 🙂

Ingredients:

  • Strawberries
  • Granulated Sugar
  • Water
  • Lemon (or Lemon Juice)

Instructions:

1.Prepare your strawberries.

Though it may seem easier to just use frozen strawberries, trust me when I say that fresh strawberries taste much better. This is also a great chance to head over to your local Farmers Market and pick up some high quality fruits. Not sure where the nearest Farmers Market is? Check out this link.

To prep your strawberries, make sure to wash them well and cut off the greens from the ends of the strawberries. I like to slice the strawberries in half or in quarters to ensure that they blend well. Toss them in a plastic bag or on a lined baking sheet and freeze for at least 6 hours or until they are well frozen.

If you aren’t using fresh strawberries, feel free to skip this step.

2. Use a food processer to make the sorbet.

Add your frozen strawberries to a food processor (a blender will work too) until a clumpy type mixture forms. For each pound of strawberries bein used, add 1 – 2 teaspoons of lemon juice, to taste. You can always add more to make it more tangy. Add a 1/2 cup of sugar, or more and a pinch of salt. The texture should by like a thick puree. If its too thick, add some water or more lemon juice. As always, add more or less of each of the ingredients depending on your taste preferences (what I like might be too sweet or not sweet enough for you, so make sure to taste and adjust).

3. Freeze.

Add the mixture to an air tight container and freeze. I like to take mine out in 3 -4 hours since I find that its usually the perfect texture.

4. Enjoy!

Personally, I find this the best step as the sorbet is best enjoyed while chilling out in the sun.
