Lunch, waffle-style

Summer is great and all, but spending my days inside with little to do can get boring. I spend hours on my laptop (#addicted), and sometimes I come across… recipes. Or, articles like this. Many times I go on a site, which you may have heard of before: Buzzfeed. Where I come across articles like this. Long story short… I LOVE to find creative ways to spice up life. “Life” meaning food.

waffle_FotorSo… when I came across the idea of cooking a variety of foods in a waffle iron, I obviously had to give it
a try.

To a) keep it healthy, and b) keep it simple, I decided to “waffle” a sandwich made using a wrap, kind of like a quesadilla. Inside, I put sweet potato hummus (which is amazing, go buy some), kale (from a U-Pick), and meat (the first time ground chicken, the second time turkey deli meat).

The result? YUM. Because of the waffle-ing, my lunch was full of crunch. The wrap was perfectly crispy in
places, but still soft and delicious. When I used deli meat, the turkey was cooked in such a way that it almost tasted roasted. Sweetness was added by the sweet potato hummus, and an interesting yet delightful texture wasadded by the kale. waffled_Fotor
