Leftover mashed potatoes = mind-blowing breakfast

IMG_0213Breakfast is important and absolutely necessary, and that is NOT something I believe to be debatable. Therefore, the question comes down to: What should I have for breakfast? I could have cereal and an egg. I could have toast and peanut butter. I could have oatmeal and a smoothie. OR, I could have a banana-mango smoothie with an egg cooked in a ring of leftover mashed sweet potatoes.

Personally, that sounds like a pretty good option to me. And after this week, I can confirm that option to be AMAZING.

The procedure is simple:

  1. Put a pile of mashed potatoes (yams, sweet potatoes, or the normal guys) on a plate
  2. Form a ring with the mashed potatoes, ensuring there are no gaps
  3. Crack an egg and dump it in the middle of the ring
  4. Microwave in 21 second intervals (or whatever number you desire) until the egg appears cooked
  5. Adorn with salt and pepper, or any other desired seasoning(s)

A few pointers:

  • Some of you may prefer to break the yolk before you cook it.
  • I found that it took quite a while in the microwave to get all the egg white cooked, which resulted in the yolk being more solid than I prefer, but hey, it was still wonderful.
  • If the egg oozes out of the ring, don’t worry, it’ll still taste the same. 🙂
  • You could try cooking it in a frying pan, I’m just not sure how easy it would be to get the whole thing out of the pan without totally destroying it.
