Spicing up a Sugar Cookie

Sugar cookies on their are always an awesome treat, but because they are so plain, they also provide a great base for making other types and flavors of cookies. The simple and essential ingredients found in a good sugar cookie can be easily modified and changed to create a whole new different cookie- some of my favorites involve the addition of only one or two extra ingredients to the original sugar cookie recipe.

To start off, you will need to prepare sugar cookie dough.  This recipe is simple and easy to work with.

After making your dough, the first variation of the sugar cookie involves adding sweetened coconut shavings to the dough. I usually just eyeball the amount of coconut I add to my dough, but depending on personal preference, adjust to your own liking. However, I’ve noticed that coconut shavings are not very noticeable in small amounts, so do keep that in mind when adding it to the mixture. After the cookies are baked, I top then off with some more coconut and leave them to cool.

To make an almond cookie, simply add some almond extract to the dough. Unlike coconut shavings however, a little almond extract goes a long way- I added a teaspoon to mine. If you’re a fan of a cookie with more texture, you can also add shaved almonds to the dough as well. If you, like me, are not so much a fan, just garnish the baked cookies with icing and almond chunks for the perfect crunch.

For a cookie with a chocolate taste, bake the sugar cookies as normal and wait until they have cooled down. After they cool, spread them with nutella and add chocolate chips on top. I love this variation because it’s basically making a chocolate chip cookie without actually making one.
