How to make Sweet & Sour Chicken
Ingredients
2 chicken breasts
1 1/2 cup pineapple
2 large potatoes
2-3 tbs corn starch
2 glove garlic
2 eggs
200-400 ml oil
3-4 tbs ketchup
1 green onion (optional – for decoration)
1/2 tbs sugar
1 sweet pepper (optional – for taste)
Preparation
- Cut the potatoes into small pieces (I have small potatoes that why I cut them into half)
- Cut the chicken breast into small pieces; they should be around the same size as the cut potatoes.
- Cut the pineapple into pieces around the same size as the chicken breast and potatoes (you can also buy pineapple that is already peeled and cut).
- Beat two eggs and mix well (They will be used to coat the chicken for deep frying).
- Mince the garlic, cut the green onion and sweet pepper.
Method
Chicken and Potatoes
- Put a small pot on the stove and add the oil (enough to deep fry). Wait until the oil is hot (Be careful! you may want to let your parents help you if necessary).
- Make sure that your potatoes are not wet, add them to the hot oil and fry for 10-15 minutes or until until they are golden brown.
- While the potatoes are cooking, dip the chicken breast in the beaten eggs and coat with corn starch.
- When the potatoes are finished, put into a bowl lined with paper towel to drain the excess oil.
- Add the chicken breast to the oil and repeat the process. Be sure to test a piece of chicken to make sure that it it cooked all the way through.
Sweet and Sour Sauce
- Put a frying pan on the stove, add oil and add the minced garlic. (Make sure you don’t add the garlic into the hot oil because it will burn easily).
- Stir well and add ketchup (4-5 tbsp.) when you smell the aroma of the garlic. Continue stirring.
- Add water (add little by little; the amount will depend on how much you want) Continue stirring.
- Add sugar, about 1-2 tbs to taste. You can taste the sauce to see if you need more sugar after.
- Add pineapple and green pepper (optional). If you are allergic to pineapple, you can substitute in vinegar or lemon instead. White vinegar is ideal, but remember that you will need to add more corn starch if you use vinegar. Mix well.
- Season sauce with salt and/or black pepper to taste.
- If your sauce is very watery, add corn starch (about 1-2 tsp. to thicken). If you are using vinegar, add the corn starch immediately after adding the vinegar because it evaporates very quickly.
- When you are happy with your sauce, mix the chicken, potatoes and the sauce together in a serving dish or pour sauce over the chicken and potatoes; whichever you prefer.
- Serve with steamed rice (optional but highly recommended).
