I was cooking up a recipe for my Spanish class the other day, and I came across this surprisingly easy and very delicious recipe for traditional Spanish sugar cookies, or pastissets. This recipe is seriously easy – only a handful of ingredients are needed to make a soft, moist, melt-in-your-mouth type cookie with an added twist.
For this recipe, you’ll need:
1 cup butter at room temperature
1 egg
1/4 teaspoon cinnamon
1/2 cup of sugar (adjust this based on how sweet you like your cookies- I found this amount to yield only a slightly sweet cookie, nothing to noticeable or extreme)
1 tablespoon lemon zest (again, adjust based on your own preferences, but note that this is the ingredient that makes this recipe different from the average sugar cookie)
Confectioner’s sugar for dusting
1. Start by combining the butter, sugar, egg, and lemon zest together. To make this process easier, cut up the butter into small cubes.
2. Add the flour and cinnamon to the butter mixture. Knead the ingredients into a soft dough.
3. On a floured surface, roll out the dough to a preferable width. Using a cookie cutter (I used the rim of a cup for this), cut out pieces to make your cookies. However, be sure not to make your cookies too thin, as they do turn out quite soft and tend to crack easier the thinner they are.
4. Align the cookies onto an ungreased baking sheet and bake for 10 minutes at 350 degrees F.
5. Dust with confectioner’s sugar if desired, and enjoy!
