DIY: Melted snowman cookies

There are snowman cookies being sold everywhere, but who says we can’t make them special and unique? The cookies are super tasty and a tonne of fun to make. So instead of sitting  in front of a TV with chips, growing fatter and fatter by the minute, get active! You can try this recipe with either friends or family, making use of a warm winter night.

To make to the gingerbread cookies from scratch:

Ingredients: (makes two dozen)

2 and 1/4 cups of all purpose flour                                3/4 cups of softened margarine

2 teaspoons of ground ginger                                          1 cup of white sugar

1 teaspoon of baking soda                                                1 egg

3/4 teaspoon of ground cinnamon                                 1 tablespoon of water

1/2 teaspoon of ground cloves                                         1/4 cup of molasses

2 tablespoons of brown sugar                                          1/4 teaspoon of salt

To-Do:

  1. Preheat oven to 350 degrees F (175 degrees C). Sift the flour, ginger, baking soda, cinnamon, cloves, and salt in a large bowl. Set aside.
  2. In another large bowl, mix together the softened (microwaved 15 seconds) margarine and 1 cup sugar and beat until light and fluffy. Beat in the egg, then stir in the water and molasses. Gradually add in and stir the sifted ingredients into the molasses mixture. Shape each dough balls into grape tomato sizes, and roll them in the remaining 2 tablespoons of sugar. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly by placing a spoon on top and press.
  3. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.

To make the melted snowman cookies:

Ingredients: (for 2 dozens)

800g of fondant icing sugar                                                24 gingerbread cookies( the ones made)

24 large white marshmallows                                             96 mini smarties(chocolate beans)

24 pretzel sticks                                                                      black writing icing

To-Do:

  1. Put the icing sugar into a bowl and add cold water one teaspoon at a time until the mixture is perfect consistency(runny but thick enough to coat a spoon).
  2. Cut the marshmallows in half using scissors, be careful.
  3. Spoon a small amount of icing onto each cookie and attach half a marshmallow on top of the cookie. Using a little more icing, stick the other half on top at an angle. Drizzle a little more icing onto the cookie to make melting snow.
  4. Snap the pretzel sticks in half and place on the cookie as arms for the melted snowman. Stick orange smarties on for the noses. Stick three more smarties on each cookie to represent buttons.
  5. Using the black writing icing, pipe small blobs for the eyes and mouth. Leave to set. Repeat with all 24 cookies.
