Since school has started, everyone’s schedule is getting packed – from early morning practices to after school activities. That’s why we all need a delicious and nutritious breakfast to keep our brains working and bodies energized. However, most of us don’t have time in the morning to make a well-rounded lunch, or when you open the fridge, you get overwhelmed by the food and don’t know what to eat. But don’t worry, it happens to all of us!
That’s why today, I am going to show you the all powerful super omelette that can be made in 15 minutes:
Looks yummy right? Its actually one of the simplest omelettes I have EVER made.
To make this omelette, you don’t have to follow the recipe word by word. Get creative, if you like mushrooms, add some. This is a secret: it will taste better if you add in your favorite vegetables.
So, let’s get started.
The ingredients: ( makes servings for 1):
- 2 slices of quality prosciutto (can be replaced with shreds of bacon)
- 2 eggs (free range eggs are the best as they are the HAPPY eggs)
- 1/2 handful of grape tomatoes (different colors will make the omelette look more attractive)
- 1/2 handful of fresh basil leaves (the amount of basil can be up to you, giving your omelette the taste that you like)
- 1/2 handful of red chili with the seeds removed and fine chopped (optional; replace if you do not like things that are hot and spicy; can be replaced with any kind of vegetables)
- 1 tablespoon of olive oil for drizzling (optional)
How-to:
- Preheat your stove to high and place a non-stick frying pan until you can feel some warmth if you put your hand a little above the bottom of the pan. WARNING: DO NOT TOUCH THE PAN WHEN IT IS HOT.
- Dry fry the prosciutto until crisp; or if you choose, pour in a teaspoon of olive oil, and let your bacon shreds do their thing.
- Remove the prosciutto/bacon to a plate and place the pan back onto heat.
- Whisk the eggs in a small bowl and season with sea salt and pepper.
- Pour the egg mixture into the pan and mix the egg around the pan with a spatula( forks may scratch the pan).
- Scatter the tomato/vegetable pieces on top of the egg.
- Turn of the grill and use the excess heat to cook until the eggs and the tomatoes are nice and warm.
- Throw the prosciutto/bacon on top of the egg and sprinkle the basil and the chili.
- Season with black pepper and drizzle the olive oil on top
- Voila! Your omelette is ready
